Erica; My best advice for counter-acting the ill effects of a trans fat "over-dose" would be to consume unprocessed polyunsaturated fats. Since oils containing polyunsaturated fats (sunflower, safflower, canola, etc) may have been processed without your knowing about it, I would not use oil as the antidote. I would use natural foods, such as walnuts, ground flax (on your cereal or in yogurt etc), salmon or sardines, and soy beans. There is only one paper that I am aware of that directly points to polyunsaturated fats countering the ill effects of trans fats. Clyde, Just for kicks, let's say "trans fat" is a poison and I just had an accidental dose, then what anecdote (i.e. maybe healthy monounsaturated fats?) would you "prescribe"? Good advise to avoid trans fat. I wish more of the American public knew about this. Erica
