My personal egg recipe: Saute cut up peppers (red, yellow, orange), tomato, broccoli and kale with salsa for 5 or 10 miinutes (don't let anything blacken! keep an eye on it), then add 3 or 4 egg whites and 1 egg yolk. When the eggs are almost done cooking, turn the heat to low and put a huge pile (the equivalent of 3 large salads) of spinach on top and put a lid on it. Turn the spinach into the eggs every minute and as soon as the spinach has cooked down (happens in less than 5 or 6 minutes) add chunks of avocado, mix and serve. Drizzle a bit of cheddar cheese on top, have non-fat or low-fat beans or refried beans on the side (I use Rosarita brand) and a couple slices whole grain bread (the heartiest you can find). I LOVE this breakfast.
My personal cereal recipe: Cook either whole oats (I don't take the time for steel cut, just going for the regular 5 minute), Wheetena (from Whole Foods) or Oat Bran (from Safeway). Again, make sure NOT to let anything burn (charred food contributes to cancer). As soon as the cereal is cooked immediately throw in a bunch (roughly 1 cup i.e. 70 Calories) of mixed berries, stir and take off the heat. If I feel like a sweeter than usual breakfast I cut up a small fuji apple and add it in addition to half the amount of berries. Stir every minute for a few minutes so the berries thaw while they cool the cereal (if you like your cereal hotter then add the berries one minute before turning off the heat). Put in pieces of walnuts or almonds and pour on 8 oz or more of PLAIN UNSWEETNED soy milk. Incredibly good.
